WebHow much fat is needed/worth dry aging? I already wrapped my roast in steak wraps but now I’m second guessing myself on if these are ideal to dry age or not. The pic is pretty close to the amount of fat/trim that was on my roasts. Any help would be greatly appreciated don’t want to be wasteful.
